Reading labels can be very difficult, and reading a label to determine if a food is Low FODMAP is almost an impossible task. Those familiar with a Low FODMAP diet know this well. For example, ‘inulin’ is commonly used carbohydrate to increase fiber content in foods. Sounds like a great idea, right? It’s NOT great for those who are sensitive to a subset of FODMAPS called fructans (a.k.a. FOS or fructoligosaccharides) that humans are unable to break down. They are fermented in the colon, producing gas that stretches the intestine lining that causes pain, bloat and altered bowel habits. It may go unnoticed if you don’t have IBS, but if you do, it can be a real problem!
In addition to deciphering ingredients, you also have to wonder if the process of making the food alters the FODMAP content. We know that drying, heating or baking foods changes the sugars. This is why spelt sourdough bread that’s had more time to leaven with yeast has lower FODMAP levels. (According to Monash University, the yeast used in the baking process breaks down the fructans.) We’re also starting to learn that processing can change the FODMAP levels – sometimes they are lowered, but other times they can be increased. It’s just not possible to predict, and that’s why we test our final products.
Armed with this knowledge, I felt very strongly that certification of all of my products was a necessity. It was paramount that we make sure our bars are safe in their final form. It’ simply not enough to say they are Low FODMAP because each ingredient is safe on its own. I wanted to know that every TrueSelf Foods product is completely safe for you to eat, regardless of which FODMAPs trigger your symptoms, so we took the time to do it right.
During the creation of the bars, we partnered with a food scientist as well as several dieticians that are world-renowned for their low FODMAP expertise. It wasn’t easy; we went through numerous batches until we got it right. Once we were confident that our bars were ready for certification, we worked with The FODMAP Friendly Program and a third party testing lab to confirm that our products are FODMAP friendly. The process took longer than expected, but it was well worth it. You can enjoy our products with confidence, knowing that they are safe – for me that was essential.
